We want dishes that are light, healthy, delicious, and that feed the heart.

Today, I have for you a full day of Love. ❤

Breakfast is this Millet Porridge with a Strawberry Sauce.  No millet?  No worries! Use any grain you have on hand. This porridge has Whole Grains which are high in fiber to improve cholesterol levels and reduce the risk of stroke and heart disease, Strawberries that are rich in antioxidants to fight cellular damage, Chia Seeds which are rich in omega 3 fatty acids which have been shown to prevent plague build-up, lower cholesterol, and lower blood pressure, and Maple Syrup, only 2 teaspoons per serving, to provide a little sweetness along with antioxidants (maple syrup comes from a plant, you know). 😉

Lunch is this beautiful Winter Kale Salad.  This salad has beautiful greens like Kale which are high in fiber, antioxidants, and minerals like magnesium and potassium which have been shown to lower blood pressure, Pomegranate Seeds which are high in fiber and vitamin K which prevents build-up in the arteries, and lowers stroke risk, Pecans which are high in minerals like magnesium and potassium and fiber to aid in lowering blood pressure, Pears which are high in fiber and antioxidants and have been shown to lower blood pressure, and Pumpkin Seeds which are high in healthy fats, magnesium, and zinc and have been shown to help raise HDL cholesterol (the good stuff) while lowering LDL (the bad stuff).

Dinner is Vegan Minestrone.  This soup is so delicious and filling that it is a complete meal all on its own.  TheTomatoes are high in fiber, potassium, and antioxidants, the Beans are high in fiber and have been shown to lower cholesterol, blood pressure, and inflammation, and theGreen Beans are high in fiber and vitamins, too.  Don’t want to use the rice pasta and don’t have problems with gluten?  Choose a Whole Grain pasta for its added benefits.

Dessert is this quick and easy but OH so delicious Dark Chocolate Turtles😋 Dark Chocolate is packed with antioxidants and flavonoids which have been shown to lower blood pressure (BUT…choose dark chocolate without a lot of dairy or added sugar-not a healthy choice), Dates which are packed with fiber and potassium and very high in fiber and minerals, and Walnuts with their heart-healthy omega-3s.

You cannot go wrong with this day of heart-loving recipes!
